The steel bottle in your bag that keeps coffee hot for six hours was not invented for coffee. It was invented to answer a much stranger question: how do you store a gas that has been chilled so cold it turned into a liquid, without that liquid immediately boiling away back into the air?

A problem only a very cold physicist would have

In the late nineteenth century, physicists racing to liquefy gases — oxygen, nitrogen, eventually hydrogen — ran into a maddening practical obstacle. They could achieve temperatures low enough to turn these gases liquid, but any container they poured the liquid into acted like a tiny furnace by comparison. Heat crept in from the room through the container's walls, and the liquid simply boiled away, sometimes in minutes. You could make liquid air in a lab and lose your entire sample before you'd finished writing down the result.

The Scottish chemist and physicist James Dewar, working at the Royal Institution in London, solved this in 1892 with an elegantly simple piece of glassware now called the Dewar flask. He built a container with two walls instead of one — an inner vessel and an outer vessel, nested with a gap between them, and then pumped nearly all the air out of that gap to create a vacuum. Heat moves through matter, whether by direct contact (conduction) or by circulating fluid (convection); a vacuum has essentially no matter in it to carry heat across, so a vacuum gap is a strikingly effective barrier against both. Dewar also silvered the facing glass surfaces, mirror-like, to reflect back the third mode of heat transfer, radiation. The result was a container that could hold liquid air for days instead of minutes.

Dewar didn't patent it. Someone else did, and got rich.

Here is the part of the story that tends to needle people once they hear it: James Dewar never patented his flask. He viewed it as a laboratory tool in service of scientific research, not a commercial product, and he published his design openly for other scientists to use and improve.

That openness is exactly what let a German company capitalize on it. In 1904, a group of glassblowers in Berlin, working under the company name Thermos GmbH, realized Dewar's vacuum-insulation principle could keep a much more ordinary liquid — hot drinks — at temperature for ordinary people, not just liquefied gases for physicists. They patented the consumer application, held a public naming contest that produced the brand name "Thermos" (from the Greek word for heat), and began manufacturing vacuum flasks for households, explorers, and eventually soldiers. Roald Amundsen and Ernest Shackleton both carried Thermos-brand flasks on polar expeditions in the early twentieth century, which did wonders for the brand's adventurous reputation.

How "Thermos" became a word instead of a company

The Thermos brand became so dominant, and the product so novel, that within a couple of decades ordinary English speakers had started calling any vacuum-insulated bottle "a thermos," lowercase, regardless of manufacturer — the same fate that eventually befell Kleenex, Xerox, and Aspirin. That linguistic slide had real legal consequences. In 1963, an American court ruled in King-Seeley Thermos Co. v. Aladdin Industries that the word "thermos" had become so generic in everyday use that the company could no longer enforce it as an exclusive trademark against competitors — Aladdin was permitted to sell its own vacuum flasks labeled "thermos" as long as it distinguished its own brand name clearly. It's one of the classic case studies taught in trademark law for exactly this reason: a brand name can be loved into extinction by its own success.

Why the design barely needed updating

What's genuinely remarkable about the vacuum flask, a century-plus after Dewar built the first one, is how little the core physics has changed. Modern insulated bottles have swapped fragile double-walled glass for stainless steel, which is far more durable and doesn't shatter if dropped, and manufacturing improvements have made the vacuum gap more reliable and the steel walls thinner without losing performance. But the underlying trick — a sealed vacuum gap between two walls, doing the work that thick insulation or bulky padding would otherwise have to do — is identical to what Dewar demonstrated with liquid air in a London laboratory in 1892.

That's a strange kind of legacy for a scientist. James Dewar is remembered today mostly for other achievements in low-temperature physics — he was the first person to liquefy hydrogen, in 1898 — and yet his most globally distributed contribution to daily life is a container millions of people fill with coffee every morning without knowing his name. The flask that keeps your commute bearable is doing exactly the job it was built for: holding something at a temperature the room outside desperately wants to change, and simply, patiently, refusing to let it.

The genericization story has a pointed irony for the Thermos company itself, since the same American court ruling that stripped away Thermos's exclusive trademark right specifically credited the company's own advertising success for the loss -- decades of ads teaching the public to say "thermos" for any vacuum flask had, in the court's reasoning, actively trained consumers out of treating the word as a specific brand at all. Other companies facing the same risk have fought it more aggressively since; Xerox, for instance, ran a long advertising campaign in the late twentieth century specifically asking customers to say "photocopy" instead of "xerox," a deliberate, largely successful defense against the exact fate that overtook Thermos decades earlier. It's a strange kind of commercial tightrope: a company wants its brand name recognized everywhere, right up until recognition becomes so total that the name stops meaning the company at all, and starts meaning the object itself -- at which point, legally, the brand can simply cease to be defensible property.
